This is a very interesting foodie post from Ms. Oggi. For me, that is. I mean, I have never tried anything like this before. Would love to try it! Click on the shot to know what I am babbling about! :P

I had one remaining big chayote and some dried mushrooms which I didn't want it to go to waste. The mushrooms were still fine, but the chayote had to be cooked. Rummaged through my meager supply and came up with this: Chayote and Mushrooms in Coconut Milk.


Ingredients

  • Chayote (peeled and sliced)
  • Mushrooms (I had dried shiitake mushrooms, which I soaked in water for about fifteen minutes, then sliced; reserve the liquid)
  • Coconut milk powder



Procedure:

  • Place chayote slices as well as the sliced mushrooms inside a pot. Add the reserved water (where the mushrooms were soaked) to the coconut milk powder, then mix in with the chayote and mushrooms. Water must be more than halfway.
  • Let boil then simmer until chayote and mushrooms are tender. Add more water if needed.
  • Since the coconut milk powder that I used is already seasoned, I no longer had to add anything else. But it's your choice: you may add salt/fish sauce/pepper if you want.
  • Remove from fire once satisfied.
  • Delicious when served and eaten warm.



Back home we used to cook the chayote with ground pork, or just with the coconut milk. Adding the mushroom is a first for me and it is a refreshing difference! The mushroom water as well as the mushroom itself gave it another "dimension".

We had that for lunch, paired with fried fish! Loved it! :)

This week's Food Friday player that's going to be featured is...

Chef Win, who blogs over at lamonsakusina with his blog post: Lamb Chops with Honey and White Balsamic Vinegar

I wish that lamb chops are not that expensive around here, but they are. That's why I can only imagine that tasty treat that Chef Win shared with us from his food blog, last week. His blog is relatively new, but he is not a newbie when it comes to cooking; am sure he has more delicious recipes to share with us. I wanted to try Tuyo (Dried Fish, usually salted) Pasta, but I forgot to buy the fish, so this is what I came up with: Mushroom-Olives Spaghetti.


Ingredients
  • spaghetti (or your choice of pasta, cooked accdg to package instructions)
  • mushrooms, sliced (I used shiitake -which I soaked in water for two hours- since that's what I have, but you can use canned or any other fresh/dried mushrooms that you have available)
  • olives (pitted, preferrably; you can use black/green or both)
  • all-purpose cream
  • salt, pepper, olive oil, garlic, onion, water (as needed)
  • malunggay powder (optional), or any other fresh herbs as garnish

some of the ingredients used: all purpose cream, olives, and mushrooms

Procedure
  • Set aside the cooked spaghetti, keep warm.
  • Heat olive oil in pan and saute the sliced garlic and onion. Add the mushrooms and cook until soft (in my case it took around twenty minutes and I had to add a bit of the water where I soaked it).
  • Add the sliced olives (you might want to add in olive oil) and mix well. Season with salt and pepper.
  • Pour in cream and add water (I used the water where I soaked my mushrooms) until you get the consistency that you want.
  • Add pasta and cook over low heat for around half a minute then turn off the heat.
  • Transfer on a plate and sprinkle with a bit of the malunggay powder (which is optional). Or you may opt to add parsley or any other fresh herbs, instead.
  • Best eaten warm.


I forgot that my eldest wasn't so much into olives (he loves mushrooms, though) so he ate sparingly while my youngest loved it! Yes, he LOVES olives. lol. Me too. :D

This week's Featured in Food Friday player is...

Ms. Luna Miranda, who owns Live in the Moment, with her blog post: Breakfast of Champions.

Dried salted fish, fried. I could eat them all day! Such a perfect combination with steamed rice, specially when dipped in  spicy coconut vinegar. I know, it's not meant for everyone, but it seems like Ms. Luna Miranda has a thing for them, too! Do go and check out her post and see what else had for breakfast that day!

My food post for today is: Leftover Fettuccine. I call it "leftover" since most of the ingredients were actually leftovers! lol.


Ingredients:

  • leftover meat (ground)/mushroom, and camote tops (sweet potato greens) dish
  • your fave spaghetti mix
  • spinach fettuccine (or whatever pasta you have lying around; cooked according to package directions)
  • your choice of cheeses



Procedure:

  • Heat up the leftover dish (in my case, the meat/mushroom and sweet potato greens combo), then add the spaghetti mix. Add cheese, if you want. Adjust taste (add salt, pepper, herbs...whatever you prefer).
  • Mix with the pasta.
  • Sprinkle some more cheese on top.
  • Enjoy! :)



It actually took me less than thirty minutes to whip that up. It was the first time that I tried sweet potato greens with any pasta and it looks like I just might repeat it again...my youngest loved it! Me too. :)

This week's Featured in Food Friday player is....

Ms. Adjoa, who owns the blog A GIRL'S REFLECTIONS, with her post: Food Trends 2012

As I was browsing through the site, I couldn't help but notice the wonderful pictures that accompanies her posts...very sharp and clear! I wasn't surprised, then, when I read (in one of her recent posts) that she got mistaken for a professional photographer! Way to go, Ms. Adjoa! Do go and check out her site that not only offers good photography, but also good food!

This week's food post was something that I needed that day; I was feeling pretty lazy, so all I wanted was to get comfy in a couch, sip/munch/chew, and when done: read a heart-warming book...I didn't find any heart-warming book to read, so instead I read The Son of Neptune (The Heroes of Olympus series) by Rick Riordan. lol.

This was what I made (and had) that day:

Pork and Beans with Mushrooms

Ingredients are pretty simple:
  • ground pork
  • a can of beans
  • a can of mushrooms
  • lots of tomatoes
  • mixed dried herbs (rosemary, basil, thyme, marjoram, oregano, and sage)
  • onion, garlic, salt, pepper, soy sauce


Procedure was equally fast and easy:
  • Thaw the meat and put in pan with water (just enough to cook the meat), soy sauce, salt, dried herbs, sliced tomatoes, and pepper. Let boil and mix. Let it be for a few minutes so that the ingredients get time to blend together.
  • Add the sliced onion and garlic. Simmer some more.
  • Add the sliced mushrooms and the beans (I didn't add the brine solution).
  • You can add in some more liquid (plain water or any stock that you might have); if you want, at this stage. Adjust seasonings...
  • Best eaten when hot. :)

Tasted Good!

Last weekend my family and I did some Christmas shopping, and while we were out we decided to eat at T.G.I. Friday's. My youngest and I had their Mushroom Chicken Mushroom (deep fried chicken topped with mushroom and mozzarella cheese, together with corn, rice, and whole button mushroom in crispy batter) while hubby and the eldest had their Filet Mignon (tenderloin chargrilled to your preference).

Honestly, it was one expensive lunch (specially for a Scrooge like me! :D ), but everything tasted real good.

For dessert we decided to go to Krispy Kreme and I picked their Double Chocolate Kruffin. It was delicious...but too sweet for me. I had to leave out the sweet stuff on the center. Ate the rest of the doughnut, though. LOL. xD

Had one satisfied tummy that day! :tup
