Today's Food Friday post: Embutido and Pechay Sub


Ingredients
bread of your choice (i used a small baguette)
embutido (sliced, which my sister-in-law made)
pechay/bokchoy (cooked in chicken stock)
red onion rings
pepper, salt, olive oil
calamansi/lemon juice


Assemble your sub:
bread - pechay - embutido slices - onion rings - pechay.
Drizzle olive oil, pepper, salt, and calamansi/lemon juice (optional).
Cover. Bite.



Embutido is sort of like meatloaf. It is steamed, though, instead of baked. Both are delicious (in my opinion), but I only had embutido so that was what I used. :D

You can wilt the onions, too...or maybe toast the bread. Or maybe add cheese or mayo. Your choice. It's your sub and you are entitled to eat it the way you like it! :P

This week's featured Food Friday player is...

I think doughnuts are fun to eat (and messy sometimes), and these red velvet doughnuts created by Ms. Oggi looks are utterly tempting! I wouldn't hesitate grabbing one...or two. lol. So perfect this season! Want to know how she made them? Click the picture above!

Malabar Spinach, Corn and Pork Soup...this week's post.


Ingredients:

  • pork cuts (I used pork shoulder)
  • fresh corn, malabar spinach (also called alugbati in our part of the world)
  • salt, pepper, Italian seasoning
  • garlic and ginger (squashed)
  • fish sauce (optional)



Procedure:

  • Place pork cuts in pot with water, salt, pepper, Italian seasoning, garlic, and ginger. Boil, then keep simmering until tender.
  • Remove the kernels from the corn cob, then place into the pot with the pork cuts. Continue simmering until corn the gets cooked.
  • Adjust seasoning. Once satisfied, turn off heat and throw in the sliced malabar spinach leaves. Cover lid for a couple of minutes to allow the leaves to cook.
  • Best served hot.



My sister's alugbati plant was growing up so fast, I just couldn't resist taking some of it to cook at home. I was afraid my sons wouldn't like it, that's why I sliced the leaves instead of putting them whole in the soup. I really liked the almost earthy-like taste it gave to the broth...am sure I'll do this again when I have the chance. My kids liked it, too. Happy Me! :)

Another delicious treat made by Winnie! I have featured her Food Friday post before (here) so some of you might be familiar with her food blog already. Still, I encourage you to check out her latest creations! You wouldn't regret it. :)

Bunuelos {Quick and Tasty Egg Doughnuts}, that's my food post for today.


I remember my sister making bunuelos when we were younger, but it was a complete disaster (it was burnt on the outside and raw on the inside, lol)...so am trying it now. I figured am older now (LOL), so maybe my result will be much better. I don't have her recipe, though...so am using this recipe from here: Filipino Snacks and Sweets (by Norma Olizon-Chikiamco).

Ingredients:
  • 50g (1/4 cup) solid vegetable shortening
  • 60g (1/4 cup) butter
  • 250 ml (1 cup) water
  • 125g (1 cup) sifted flour
  • 5 eggs
  • 250 ml (1 cup) oil
  • 60g (1/4 cup) powdered sugar for dusting


Procedure:
  • Put shortening, butter and water in a large saucepan. Bring to boil. When water is briskly boiling, stir in the flour. Continue stirring until mixture is smooth and separates from the sides of the pan. Remove from the heat and set aside to cool for 10mins.
  • Beat in eggs, one at a time, beating thoroughly after each addition. Set the mixture aside for a few minutes at room temperature.
  • Heat the oil in a frying pan. Scoop about 2tbsp. of the batter and fry in hot oil until golden brown. Repeat with the remaining batter, adding extra oil if necessary. Drain cooked doughnuts in paper towels then dust lightly with sugar before serving

Serves 6
Preparation time: 5 minutes
Cooking time: 20mins


My youngest son loved these...and I laughed when he said (as I gave some of them to my sister), "I'm going to miss them". He was referring to the doughnuts. :D

Tasted Good!

Last weekend my family and I did some Christmas shopping, and while we were out we decided to eat at T.G.I. Friday's. My youngest and I had their Mushroom Chicken Mushroom (deep fried chicken topped with mushroom and mozzarella cheese, together with corn, rice, and whole button mushroom in crispy batter) while hubby and the eldest had their Filet Mignon (tenderloin chargrilled to your preference).

Honestly, it was one expensive lunch (specially for a Scrooge like me! :D ), but everything tasted real good.

For dessert we decided to go to Krispy Kreme and I picked their Double Chocolate Kruffin. It was delicious...but too sweet for me. I had to leave out the sweet stuff on the center. Ate the rest of the doughnut, though. LOL. xD

Had one satisfied tummy that day! :tup
