Mr. Nicholas, with his post: Cheaters Smoked Salmon Pizza, on his blog: Intelliblog.

Curious why Mr. Nicholas called this Cheaters Smoked Salmon Pizza? Looks delicious, doesn't it? If you love pizza (like me!), then click on the shot and see how you can make this yourself, too!

------------ oo000oo ------------

Since it's now summer time here (and my kids are not so keen on summer classes - can't blame them! lol), we have been waking up late. That's why our breakfast these days are usually heavier than our school days breakfast fare (fruit, soft boiled eggs, and juice/hot choco, plus the occasional cereals), which should be done in a flash. lol. Here's our "usual" summer late breakfast food: Eggs Two Ways, is how I'd like to call this. :P

Ingredients
  • Eggs
  • Potatoes (diced)
  • Bellpepper (diced)
  • Tomatoes (diced)
  • Chili leaves (or use what you have available)
  • salt, pepper, garlic, onions
  • Coconut oil for frying

Procedures
  • A. Put the diced potatoes on hot pan with oil. Then add the bellpepper, garlic, onions and tomatoes. Season with salt and pepper.
  • Put everything in the center of the pan, then top with the chili leaves (careful, there might be a bit of oil splashing since the leaves are "wet"). Immediately put the egg on top, some salt, then cover the pan (so that the leaves and egg will cook because of the steam).
  • I like my egg "cooked" on top (am not a fan of "raw" eggs, though it does look good in pictures. lol), so I waited till it was no longer "red".
  • Remove from the pan and transfer to a plate. Sprinkle with pepper.

**I added salt on the egg before putting on the cover; you may omit this, if you want. Instead, you may add the salt and pepper together after transferring the whole thing to a plate.

  • B. Place potatoes on hot pan with oil. After a few minutes, add the bellpepper, then the garlic, onions, and tomatoes. Add salt and pepper.
  • Remove from the pan once cooked.
  • If there are no more any oil on the pan, add about a tablespoon. Once hot, add the beaten egg.
  • Put the cooked mixture on top of the scrambled egg, then some chili leaves. Place on one side only, so that you can easily flip the other side to cover the mixture.
  • Cook some more, if you want, by flipping the whole thing over.
  • Drizzle with ketchup, or whatever you fancy.

Both dishes were yummy served with toast and our desired drinks (we all had hot choco that day). It's delicious with hot steamed rice, too, am sure. Yes, I will be serving more of this the next couple of days. Most probably change the chili leaves to whatever I have available! Or maybe add plantain bananas. LOL. Crazy, huh?! :)

Please don't forget to add a link back to this site (you can get the buttons here; deciding to use text instead of buttons is fine also) to be able to add your posts below. Many thanks and hope everyone is going to have a great time this weekend!

Ms. Luna Miranda, with her post Pako/Fiddlefern Salad, on her blog: Miranda.

I really would love to taste this salad. We used to cook these ferns back home with coconut milk, and even if I didn't like it at first, it just grew up on me. I seldom find fresh ferns at the grocery store where I do my shopping, but I know that they'll be coming home with me when and if I find them! Do click on the shot and read some more about Ms. LM's healthy salad post!

I haven't been cooking up anything worth blogging about for the past couple of days, simply because I think I still have the "holidays hang-over". We manage through deliveries or eating out. I know, not a good way to start the year (yikes!) but like everything else, I know this will pass. :D

But today I was excited to cook breakfast because of the special ham inside the refrigerator: Slers ham from Cagayan de Oro (Philippines). Hubby brought home one of their small-sized hams and of course we just had to have it for breakfast. Simply Ham and Eggs, that's my post for today.

Ingredients and Procedure:

  • Cook eggs the way you want them (I had mine scrambled).
  • Slice the ham and place in lightly greased hot pan. "Fry" slightly then transfer to a plate (or you may opt to heat it in the microwave or oven). Heat up the sauce that came with the ham. I decided not to put the sauce with the ham since my son wanted the ham without the sauce (kids...lol). It was fine without the sauce, though.
  • Pair with rice, or with hot pandesal (bread) and cheese, together with your favorite morning drink.

I liked the taste, since it reminded me of the hams that my family and I used to have while I was growing up. And I also liked the fact that it was cooked together with the bone, with no extenders added (nothing visible, anyway). I think I overcooked the ham slices, though, since it came out dry. Or maybe I shouldn't have cooked it at all! lol. Theoretically it's already cooked anyway. Whichever. Their small-sized ham was/is way too big for us (family of four), so we still have more of it inside the refrigerator. Expect the ham to be included in future posts! :D

Mr. Nick, with his post Bean Stew (Fasoladha), on his blog: Intelliblog.

Beans are a good source of nutrients (and relatively cheap), so I really love it when I come across a recipe that calls for beans mixed with other veggies. Mr. Nick's Fasoladha recipe is one of those that I'd love to try; I might be substituting some of the ingredients with what I have on hand, though (as usual, lol). If you're looking for something hearty and healthy to cook,  then I suggest you click the shot above.

I was surprised that the pomelo (also called shaddock {link}) that I bought was so sweet that I decided I'd make a salad out of it. As usual, I mixed it with whatever was available. Simply called: Pomelo Salad.

Ingredients

  • pomelo (I used only half of it)
  • salad greens (I used romaine, and red leaf lettuce)
  • cucumber

dressing: salt, pepper, olive oil (extra virgin), balsamic vinegar

Procedure:

  • Prepare the greens into bite-size pieces; then peel the cucumber, slice in half, and remove the seeds. Slice the cucumber to your liking (in my case, my youngest decided he'd do the slicing...hence some cucumbers were big, and some really tiny. It didn't matter to me. lol). Place inside refrigerator to chill.
  • Meanwhile, peel and open the pomelo. Remove the flesh, separate them, and place on top of the salad greens and cucumber mix.
  • Mix your dressing and adjust taste. Drizzle on top of the salad.
  • Mix and Serve.

Had that as part of my brunch a couple of days ago. I really liked the sweet/tart flavor of the pomelo, mixed with the crunchy greens. It went great with the sweet ham, egg, and toast. Loved it! So easy to prepare, too. :)

Ms. Kate, who owns the blog A Slice of Kate, with her blog post:
Dora Birthday Cake: Fondant Chocolate Cake

Doesn't that look adorable? I just love the colors Ms. Kate used for her daughter's 2nd birthday cake...so festive! Take note, she mentioned that she didn't have proper baking tools when she made this...and still it came out perfect! Her blog is filled with food posts which she herself cooked, and reviews from restaurants where she has eaten. Do drop by her blog and send her some love!

My post for this week is something that not everybody likes...the durian fruit. I know, it's one of those fruits that you can only hate, or love. Nothing in between. lol. First time I tasted it, it was 'different', but I liked it right away. Now, am loving it! <3

Durian Breakfast Muffins

I followed Jonny's Durian Breakfast Muffins Recipe, with a few modifications

Ingredients:
1/2 cup durian
1 cup flour
2 eggs
2/3 cup palm sugar (or brown sugar) - i used muscovado sugar, same amount
1/2 cup coconut milk
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon vanilla extract - i didn't add this (i forgot to buy some!)

some ingredients used: durian, eggs, flour, muscovado sugar, powdered coconut milk

Directions:

  • Preheat oven to 325F (or 310F for convection ovens). (i used an oven toaster!)
  • Remove any stringy portions of the durian flesh.
  • Mix all ingredients in blender. (i mixed everything by hand, lol)
  • Place mixture into muffin pan. (This recipe is for 5-6 large muffins.). (i placed mine in individual muffin cups and covered them with aluminum foil)
  • Bake for 15 minutes. Let cool before removing muffins. Place muffins on rack to further dry their exteriors before eating. (my muffins came out nice and dry on the outside...guess it's because i used an oven toaster)

Tip: do not consume these with alcohol as consuming durian fruit with alcohol is dangerous. Durian is a 'heaty' food so serve together with a 'cooling' food such as banana or mangosteen.

Surprisingly, the durian smell (which some find offensive) wasn't that strong after the muffins were cooked (maybe less so if I added in the vanilla). I even stored the leftovers inside the freezer, but it only stayed there for around two days. My three-year old and I loved it. He wouldn't touch the durian pulp, but he devoured the durian muffins as soon as it was cool enough to eat. ^_^

---------- :party - :party - :party ----------

Something Simple and Easy, that's what I want to call my Food Friday post for this week. :h

Ingredients used:
  • toasted bread
  • tomatoes, oranges, parsley
  • extra virgin olive oil, freshly ground black pepper
  • kesong puti
Kesong puti (lit. "white cheese" in Filipino) or Filipino fresh cheese is a soft, white cheese, similar to cottage cheese, made from unskimmed carabao's milk, salt and rennet.[1] It has a soft, close texture and slight salty taste. Some commercial versions are slightly sour due to the use of vinegar in place of rennet. This cheese originated from and is produced in the provinces of LagunaBulacanSamar, and Cebu. In the Philippines, it is a popular breakfast fare eaten with the freshly baked local bread called pan de sal.
*Source
Everything's just a matter of toasting (the bread slices), slicing (the kesong puti and the toasted bread slices), then assembling them on the plate, together with the other ingredients. The drizzling (of the olive oil) and the grinding of the black pepper over the the cheese and bread finishes everything off. Really easy. And tasty! :$

I read in a food post somewhere that they also fry the kesong puti first (in margarine, or butter) before eating it together with pan de sal...got to try that sometime! :P

This week's Food Friday post is something which I had for breakfast:
Fried Rice with Tofu and Tomatoes

I can't deny it: I am a breakfast fan. lol. I can survive without dinner, but I CANNOT survive without breakfast! :P

Ingredients used:

  • marinated firm tofu (used soy sauce, smoked paprika, sugarcane vinegar, crushed black pepper, and a premix of different herbs - thyme, rosemary, marjoram, basil, oregano, and sage)

marinated firm tofu

  • ripe tomatoes
  • fried rice (sauteed chopped garlic in hot oil, and mixed in the rice; i also added a few drops of balsamic vinegar)
  • some salted fish strands/flakes (cooked the salted fish and separated the flesh from the bones)
  • chili slices (optional)

Preparation was equally simple:

  • Place fried rice on plate.
  • Fry the tofu then place on a plate with napkins to remove excess oil; slice when it has cooled down.
  • Put the tofu slices on the plate.
  • Slice the tomatoes and put beside the fried rice.
  • Top fried rice with salted fish strands/flakes and raw chili.

Went quite well with my morning drink: orange juice. <3
