Another fish post from me (I seem to be more than crazy about fish these days! lol): Tulingan (Tuna) in Coconut Milk and Basil


Ingredients
Tulingan (cleaned, cut, and tail "ripped" off, lol; i used three small ones)
Coconut milk powder (if you have fresh, use that!) mixed accdg. to packet directions
Chili (three or more)
Bellpepper (cut into roughly the same size as the ginger)
Fresh Basil (I initially used around fifteen leaves, chopped)
Pepper, Salt, Ginger


Procedure:
Once the fish is cleaned, cut and tail removed, place in a deep pot.
Add the prepared coconut milk.
Throw in the chili, chopped basil, bellpepper, salt, pepper, and ginger.
Let boil, then simmer for about half an hour. Add more water when needed.
Adjust seasoning, and once satisfied, remove from heat.
Tastes great with sliced fresh tomatoes (with salt), and more sprinklings of chopped fresh basil (both on the fish and the tomatoes), together with steamed rice.


Yes, I ditched the fork and ate with my bare hands that day! lol. I loved the taste of the basil with the fish and coconut milk. The salted tomatoes helped much, too. Soul food!

By the way, since I bought more fresh basil than what I needed that day (even if I got the smallest pack), decided to "store" the remaining 1 1/2c basil (mixed with 1/2 cup coconut oil, then processed in a blender) inside the freezer. Will transfer the frozen basil oil cubes inside a plastic bag; that way, I have my own basil oil whenever I want/need one! :P


Am sure you can do this with other herbs, too. Less wastage this way. Or with fruits (just omit the oil, of course). I usually freeze the fruits that I use for my smoothies. I no longer add ice. :)

Another dish that I tried cooking for the first time but have eaten all the time: Tilapia Sinigang sa Miso (Sour Fish Soup).


Ingredients:

  • fresh tilapia 
  • fresh miso (i only had the yellow miso)
  • mustard leaves, radish, tomatoes
  • garlic, onions, chili, salt, pepper
  • sinigang mix




Procedure:

  • Clean the fish (remove scales and gills)
  • Fry, then set aside.
  • In a pot, saute some sliced garlic, onions, and tomatoes. Add the miso (around 2 tbsp) then water (more or less three to four cups). Let boil, then add in the sliced radish and the sinigang mix.
  • Place the fried fish in the simmering pot, then the mustard leaves and chili.
  • Turn off the heat once leaves have wilted.

Delicious while still hot, served with rice.


Frying the tilapia made this sinigang taste different; but in a good way. Maybe if I used a different fish I wouldn't fry it. This was worth a try. The yellow miso made my radish slices look icky yellow! I know, I should have used the white miso, but there was none in the grocery at that time. Anyway, still tasted great. :)

While walking home, I decided to check in on one of the wet markets along the way. I was very much surprised to see LIVE tilapia (fish) being sold, I know I just had to buy at least a kilogram. I saw that he had mussels, too ... so I got myself half a kilo. Here is what I did with my loot. :P

Drunken Mussles and Steamed Tilapia

For the Drunken Mussels

  • half a kilogram of mussels (cleaned and debearded)
  • one onion, chopped
  • five garlic cloves, chopped
  • ginger (around an inch), chopped
  • one tablespoon butter
  • around a cup of beer
  • chili


- Place the mussels in a container and dump in the other ingredients. Place inside steamer and cook until the shells have opened. Easy-peasy! :)



For the Steamed Tilapia


  • fresh tilapia (cleaned and scales removed)
  • garlic, ginger, onion, tomato (all sliced)
  • salt, pepper, calamansi/lemon juice


- Place fish first then add in the other ingredients, except for the juice. Cook in steamer, for about twenty minutes. Once cooked, add in the juice. Remove and serve immediately.


I know, adding loads of mayonnaise in that steamed tilapia is not healthy. lol. But it tasted real good! Hubby and I had a feast that day. :D

This week's post is something that I consider as soul food: Dulong (Silver Fish) Patties. Back home we used to have that at least once a week (being a coastal city) and sometimes my mom would just add boiling water, sliced onions, and calamansi (yes, really!) or if we have time, we make them into patties and fry them. Below is my own version (my mom never added parsley; she wanted it simple and clean: eggs, a bit of flour, salt, pepper, and fish only then fried). Don't get me wrong! I love our original version! It's just that some ingredients are now readily available from where I'm at, and why not use them, right? ;P


Ingredients

  • dulong (silver fish = commonly called as such because of it's being silver. lol. back home we call it "bolinao"; they look similar to whitebait fish/anchovies, but way way way way smaller.)
  • onion and garlic
  • parsley
  • egg
  • salt and pepper
  • oil for frying



Procedure

  • Clean the dulong (remove anything that does not look like the silver fish); refrain from adding water, then set aside.
  • Chop the parsley, dice the onion and garlic, then mix together with the cleaned bowl of silver fish.
  • Crack an egg, then add salt and pepper.
  • Mix everything thoroughly but gently.
  • Heat up the pan with oil, then fry the flat patties.
  • Delicious served with ketchup and hot, fragrant steamed rice.



I paired mine with some juicy tomatoes and hot steaming rice. I ate loads of rice that day! lol. My brother likes it with pickled unripe papaya (atchara), or simply with garlicky coconut vinegar (and rice, of course). YUM!

Another quick and easy dish: Fish and Eggplant (in Coconut Milk).


Ingredients:

  • fresh fish
  • eggplants
  • coconut milk (fresh or powdered form)
  • chilis, onions, ginger
  • salt, pepper
  • fish sauce (optional)



Procedure:

  • Clean fish, sprinkle some salt and pepper. Set aside.
  • Put coconut milk on pot, then add the chili, onions, salt, pepper and ginger. Simmer.
  • Add the sliced eggplants and continue simmering until cooked. Remove and set aside.
  • Add the prepared fish. In my case, since I used a very flat fish, it only took about five minutes (or was it less?!) to cook.
  • Return the cooked eggplants to the pot. Simmer for a minute, or two, and adjust seasoning. Add fish sauce, which is totally optional.
  • Yummy served hot, with rice.



Fuss free, easy, and fast! I love cooking )and eating) dishes like this! I wanted to use another veggie, but I only had eggplants, so .... :P

Just look at that stash! I never knew that KitKat had so many flavors available! Well, I don't think that all of the flavors are readily available from where I'm at; so far, the only one that I have tried is their Green Tea (aside from the Original). I liked it; which is not really surprising since I have a sweet tooth. If you want to know how, where and what the other flavors Ms. Czjai had, then do click on the shot above!

Since we are still currently on vacation, I would like to share what we had for lunch when we passed by Malaybalay City, Bukidnon (Philippines).


We had the following: Crispy Tadyang and Fish with Vegetables. Plus rice and our drinks, of course.


Mint Leaf Cafe is a relatively new restaurant and a bit far from the highway. So, it was quiet and since we arrived past noon already, very few diners. I loved the laid-back appearance (I seem to see a lot of that around here in Mindanao - in the few places that I've visited), and the fact that they also have wifi available (if you ask for it).

The taste? We loved their Crispy Tadyang (Beef) since it was really crispy on the outside and can be easily flaked using a fork! Taste-wise, I would highly recommend it to meat lovers out there! The fish, on the other hand, was a bit bland (but I still liked it). Perfect for someone who likes food that doesn't give much of a kick but would be a great accompaniment to the other dishes (like the beef). The food was relatively cheap, too (well, compared to Manila prices), since we paid only about Php400+ for everything.

Verdict? Oh yes, we would definitely go back again. Maybe try some of their desserts...when we get the chance to visit Malaybalay City again. :)

This week's post is: Tilapia in Coconut Milk with Chayote. A mouthful, I think, but simple to make. I love chayote (we call it sayote around here) in coconut milk (and that's how we usually cook it back home), and I have also come to like tilapia with coconut milk, so why not cook them together in one dish! :D

Anything with cheese....I LOVE! Specially this soft pesto cheesesticks posted by Ms. u8mypinkc00kies. It's awesome partnered with pasta, but it can also hold itself on it's own. My food post for this week is: Sinigang na Isda (Fish in Sour Broth)


Ingredients:

  • fresh fish (preferably one that's on the meaty side; I used the maya-maya (crimson snapper, i think?!) head, though)
  • young tamarind leaves (some flowers were included, too)
  • kangkong (water spinach) leaves
  • radish (one medium sized, sliced diagonally)
  • ripe tomatoes, salt, ginger, onion, chili
  • fish sauce (optional)



Procedure:

  • Clean the fish. Set aside.
  • Boil ripe tomatoes then remove from the pot once soft; peel off the skins then mash. Return to the hot pot. Add salt, thinly sliced ginger, and onion. Throw in the fish; wait till barely cooked (took mine less than ten minutes), then transfer to a clean plate.
  • Add the tamarind leaves and let simmer for about three minutes.
  • Add the radish, then after about five minutes add the water spinach and chili.
  • You may adjust the seasonings (fish sauce, or salt) at this point.
  • Return the fish to the pot, or you may add the broth to the fish.
  • Best eaten hot, with steamed rice.



I know, most would use the commercially available sour broth premixes (and I do that most of the time, too. lol) but I just couldn't resist trying it the "natural" way. Honestly I prefer cooking my sinigang this way, but for the availability of the fresh young tamarind leaves (rarely see them in the supermarket around here). I was just lucky enough to have gotten them from my SIL who lives in the province.

Another downside: the tamarind leaves when cooked can get pretty messy. Maybe wrapping it in something would help... :D

Looks quite new to me that I couldn't help looking around the internet for more about it! When I was living with my parents we used to eat fish EVERYDAY. Yeah, everyday. I thought I had eaten all the fish that I needed to last me a lifetime, but I was wrong. Now whenever I get the chance to eat fresh fish I grab that chance. That's why when I saw some fresh fish at a recent mall trip I couldn't help but buy a kilo. I forgot what kind of fish it was (am terrible with names!) but it was so fresh I cooked and named it simply: Oven Toasted Fish


Ingredients:

  • fish
  • olive oil, coconut vinegar
  • garlic, tomatoes, pepper, salt,
  • butter

What I did:
  • Clean fish and cut into serving pieces. Add salt.
  • Slice tomatoes and put a layer inside buttered containers (I used medium sized aluminum containers), together with garlic.
  • Add the fish then drizzle a bit of olive oil. Add vinegar and pepper.
  • Place tomatoes on top, if you want.
  • Cover with aluminum foil, but not too tightly.
  • Place in oven toaster (or oven) for around 10-15minutes.
  • Remove the foil and check if cooked; then place back inside the toaster/oven to get those "burnt marks" (totally optional).
  • Take out when you're satisfied with the "burnt marks".
  • Best served hot.
