The Featured in Food Friday player for today is...

Ms. Algene who blogs over at chic food trips (tales of her food adventures...), with her post: Weegol's Restaurant.

When I lived in the southern part of the country for a couple of years most of my friends there loved getting together almost every weekend. Of course, that also means food (and lots of it! lol) and I noticed that most of them like grilling their food. It's no wonder then that some of the best 'inasal' (grilled or roasted) food comes from the area!  Ms. Algene's blog is relatively new but am already loving the restaurant reviews that she has posted. Am sure you would, too (if you're interested what and where you can find some good food around her area), so do go and check her out!

My food post is something really simple but one of my comfort foods (you know me..the simpler the better! lol): Jackfruit (Langka) in Coconut Milk.


Ingredients:
  • unripe jackfruit (skin removed, and the fruit cut into bite-sized 'chunks')
  • coconut milk (around three-four cups; if you also have coconut cream, then much better)
  • salt, ginger, onions, fresh chili
  • fish sauce (optional)

Procedure:
  • Boil the jackfruit together with the coconut milk, salt, onion and ginger. Boil until tender. You may add in more liquid if the water gets too low.
  • Add in the coconut cream and fresh chili. Mix. Add fish sauce (optional).
  • When it starts to boil, turn off the fire.
  • Serve hot.
**...but my sister likes it better when it has cooled down. lol

Love that any time of the day...yes, even during breakfast! Weird, huh?! :D

my family loves langka, especially my mother. but usually with nilagang baka or baboy na may batwan. or langka with kadyos and pata, an Ilonggo favorite. i prefer fresh ripe jackfruit.:p
