Another dish that I tried cooking for the first time but have eaten all the time: Tilapia Sinigang sa Miso (Sour Fish Soup).


Ingredients:

  • fresh tilapia 
  • fresh miso (i only had the yellow miso)
  • mustard leaves, radish, tomatoes
  • garlic, onions, chili, salt, pepper
  • sinigang mix




Procedure:

  • Clean the fish (remove scales and gills)
  • Fry, then set aside.
  • In a pot, saute some sliced garlic, onions, and tomatoes. Add the miso (around 2 tbsp) then water (more or less three to four cups). Let boil, then add in the sliced radish and the sinigang mix.
  • Place the fried fish in the simmering pot, then the mustard leaves and chili.
  • Turn off the heat once leaves have wilted.

Delicious while still hot, served with rice.


Frying the tilapia made this sinigang taste different; but in a good way. Maybe if I used a different fish I wouldn't fry it. This was worth a try. The yellow miso made my radish slices look icky yellow! I know, I should have used the white miso, but there was none in the grocery at that time. Anyway, still tasted great. :)

Retro Stuffs

I love retro stuffs! Yes, I really do. I didn't know at first what to call them, but after looking online I found out that the things that I like are "retro". LOL. Yes, silly silly me! I love the hipstamatic app (because of the different lens, films, and flashes) on my phone just because the pictures looks like it was taken by one of those toy cameras! I think I'd like one of those martin retro series guitars, too. Yeah. Too bad I don't know how to play the guitar!

My current "thing" nowadays is getting a Cath Kidston bag (yes, the modern retro!)...too bad they are so far away and no store around here! The shipping fee is ginormous, hence am hesitant when it comes to ordering online from them. Oh well.

Maybe an angel will provide. lol. Or I can find someone (a balikbayan, hopefully) kind enough to buy one for me (and be gracious enough to wait for my payment when he/she gets home). Grasping on straws! LOL

Sick, Again

Last weekend, when hubby arrived, our youngest got sick. The past few weeks I have been supplementing his food with camu-camu, acai, and spirulina. So far, his health is great compared last year (when he started kindergarten). He still gets the sniffles, but most of the time he gets over it. However, last weekend it started with him vomiting, then getting petecchial rashes on his face. Plus he had fever, too. We brought him to the hospital and found out that he had tonsillopharyngitis. Dengue was ruled out after a blood exam, so he was discharged and sent home with a prescription for antibiotics and an antipyretic. The rashes was because of his fever, we were told.

Sigh. I am hoping (and praying) that next school year wouldn't be as bad. His current school is air-conditioned (whole building) and I can just imagine the thingies floating all around whenever someone gets the sniffles! Ugh. But am being pessimistic here. lol. It's just that I hope their air conditioners are being regularly cleaned and they also let the air inside every corner of the building every once in a while.

Oh well. Next year they will move to another building (this time, only the classrooms are air-conditioned, thank heavens); or he may move to another school all-together. Let's just wait and see. :)

He's responding well to the antibiotics, though am still on the alert. Mom, huh?! :P

Music

I like listening to music. Unfortunately, after I had kids I just couldn't sit down, do nothing, and just listen to music. Yes, am sure lots of moms can relate to that! But that doesn't stop me from listening to music that I love, of course. I still try to listen to my favorite music when I can, and it is always a wonderful surprise if I go online and find something new! Some of the music nowadays are too noisy (and unintelligible) for me, but I really don't mind. I just wonder how they make digital music these days. Maybe they have one of those coveted Sibelius 7, or something similar. For sure, the hits are made by the geniuses out there. Not only by the musicians, but by the marketing people, too! :P

A couple of days ago I noticed some canned liver spreads at the grocery where I usually shop; and as I was about to reach for a can, a thought came to me: Unwanted Additives! I decided I'd make my own liver spread, instead. :P


Ingredients:

  • Liver (i used pork, around 1/4kg)
  • onion leaves, cilantro,
  • bellpepper (1 large or 2 med sized ones)
  • ginger (around an inch long)
  • garlic (i used a whole bulb)
  • cumin (1 tsp)
  • Italian seasoning (1 tsp)
  • juice of one lemon
  • Worcestershire sauce (few dashes)
  • salt, pepper
  • cooking oil (optional)



Procedure:

  • Slice the liver into small sizes then place in pot. Add in the other ingredients, except for the c.oil.
  • Once cooked (adjust seasoning, if you want), transfer to a blender/food processor.
  • Process until you are satisfied with the consistency. If you find it a bit dry, add oil but not too much.
  • That's it!


- I stored the leftovers in the freezer (divided into "serving sizes").


I must say, I was a very satisfied person that day! I added mayonnaise and diced red onion to the liver mixture, then slathered it into a pair of toasted wheat-cranberry bread slices, topped with tomatoes and cilantro. I also paired it with crackers, which I liked. The next day, I added some to our omelette (with some cheese). Will definitely be making another batch again, once it's all gone.

This is definitely healthier than the canned version! :P

While walking home, I decided to check in on one of the wet markets along the way. I was very much surprised to see LIVE tilapia (fish) being sold, I know I just had to buy at least a kilogram. I saw that he had mussels, too ... so I got myself half a kilo. Here is what I did with my loot. :P

Drunken Mussles and Steamed Tilapia

For the Drunken Mussels

  • half a kilogram of mussels (cleaned and debearded)
  • one onion, chopped
  • five garlic cloves, chopped
  • ginger (around an inch), chopped
  • one tablespoon butter
  • around a cup of beer
  • chili


- Place the mussels in a container and dump in the other ingredients. Place inside steamer and cook until the shells have opened. Easy-peasy! :)



For the Steamed Tilapia


  • fresh tilapia (cleaned and scales removed)
  • garlic, ginger, onion, tomato (all sliced)
  • salt, pepper, calamansi/lemon juice


- Place fish first then add in the other ingredients, except for the juice. Cook in steamer, for about twenty minutes. Once cooked, add in the juice. Remove and serve immediately.


I know, adding loads of mayonnaise in that steamed tilapia is not healthy. lol. But it tasted real good! Hubby and I had a feast that day. :D

I honestly thought that February would still be a cold month, but it seems like I got it wrong. It actually feels like summer already! This week's post is something that we tried for the fist time at home: Tempura Sticks (Crab and Pacific White Fish Flavor).


Ingredients:

  • crab sticks (kani kama/imitation crab meat) - 1 pack
  • tempura flour
  • tempura sauce
  • oil for fying



Procedure:

  • Thaw the crab sticks thoroughly.
  • Heat oil (for deep frying) in pan.
  • Mix tempura flour with water (follow package instructions).
  • Once the oil is hot, dip the crab stick in the tempura flour mix then fry. It won't take long; the sticks are already cooked, so once it turns golden brown take it off the hot pan. Place on plate with paper towels to absorb excess oil. Keep warm. I decided to cut the sticks in half; makes for easier eating that way.
  • Pour tempura sauce in serving bowl, and place beside the fried crab sticks.
  • Dip and enjoy!



My sons always order kani tempura when we eat in our favorite Japanese restaurants and so I thought: why not make some here at home! This time I chose the "easy" way, though. Buying everything (the tempura flour and the tempura sauce) instead of making them from scratch. The result was so-so. I mean, it tasted similar to the ones that we eat in the restaurants, but something was still lacking. Maybe the ambiance from the restaurant? LOL.

All in all, a good enough experience. Will try making my own flour and sauce next time. If I have the time. :P

Sour (and sweet)

Saw these earlier today: ripe tamarind!

ate half of it already...lol :D


The old lady who was selling these said that they were sweet; i really didn't believe her, but i love sour fruits so i bought one plastic-ful from her. It was only Php20. I was surprised that they were really more sweet than sour. Some can really be so sour...and perfect for sinigang! Nope, won't be able to make sinigang with this lot; they are too ripe and sweet. :)
