I love chocolate cakes and this Chocolate Fudge Cake positively had me drooling! Just look at that generous amount of frosting, and also that super cute cake topper! But really, what I like about Jay's blog is that he not only blogs about food, but also about some causes which he believes in. Quite admirable. He has also posted some of the badges on to this homepage, so if you want to know what those are (as well as the yummy food and food-related experiences he's had) then I suggest you drop him a visit. If you're of the same mind, then you'd like his blog, too!

My food post for today is something that just warms my heart...though I revised it (A LOT, lol): Meatballs and Eggplants in Misua Noodles



My mother used to cook misua with sardines when I was young. It sometimes served as our afternoon snack during weekends, together with some neighborhood kids who'd come over and play. Her recipe was simple enough: saute some garlic and onions in vegetable oil, add canned sardines, then add about a cup and a half of water; once it's boiling add in the misua noodles. Snack would be ready within ten minutes!

Mine's a variation of her recipe....
well, I'd like to think so. :i

Ingredients:
  • ground pork (made into meatballs, mixed with spanish paprika, salt, pepper, soy sauce, garlic, egg, and onion)
  • eggplant (sliced thinly) and chili (both pan-grilled)
  • onion, garlic, and tomatoes (all diced)
  • water, pepper, salt
  • canola oil (around a tablespoon for sauteeing)
  • misua noodles


Procedure:
  • Saute the diced onion, garlic and tomatoes briefly then set aside.
  • Add the meatballs one by one till cooked.
  • Add water then let boil.
  • You may opt to add salt (or fish sauce) at this point. Your choice.
  • Once boiling, add the misua noodles; it'll be done in two minutes, or less.
  • The eggplants and chili can be added once the soup is transferred to a bowl.

*adding chili is always optional.


I didn't have this as a snack, though. It was dinner. ^_^

I've had classmates drop out from school, but I never really thought that deeply about it. Some had difficulty coping, some had financial problems, while some just didn't feel like going to school anymore (yup, some classmates in college decided that working was fun compared to staying in school). There are a number of reasons why college dropout rates go up or down, but I never really thought that dropping out of school can cause a loss in income, too.

Yup, used to live here...oh, only for about a year. Not in this particular street, though. Our place was much quieter, lol. Honestly, I miss the place.

We pass here everytime we go to hubby's place (their house is in the next town)...

Random Facts

My decision to choose the medical field was largely influenced by my father. He wanted us to take either nursing or a pre-med course then proceed on to medicine proper. However, I might have deviated a bit, since I chose veterinary medicine. :P

I guess if I studied human medicine, I might have learned some random facts regarding the human body, such as those below....

I like using my canon camera a LOT, so it's important for me to be sure that my battery's charged before we leave the house. One time, it was hubby who used the camera and he forgot to charge after he used it the whole day! I didn't know he'd be using it the next day again, so I didn't remind him. Imagine his surprise when the battery got totally discharged while he was in the middle of taking some shots...lol. I know, am laughing about it now, but he was totally annoyed when it happened. He went to a camera store, but all they had that time were some olympus camera batteries. Yes, he was in the province that time. He had no choice but to sit that program out.

Lesson learned. I think we need to buy another battery for our camera, though.
Yeah, I think we should. ^_^

Heavy on my tummy...

...that's KFC's Tower Burger. Had it delivered and it arrived in this state: half of the lettuce out of the bun. :D

But am not complaining. Delivery was on time.

It was huge, but I finished it. Am not really a burger person (unless it's fish fillet inside!), so I don't think I will be ordering this for myself anytime soon. Most probably, it will be for my 12year old. :mj

Oatmeal Choco Chip Cookies

One look at that shot and I felt like I wanted to be a kid again...able to eat TONS of cookies without gaining a pound! lol. Ms. Dudut's site is a place where she mostly blogs about her kitchen experiences. And yes, like what her site name suggests: she 'twists' some of the recipes to her liking, and ultimately comes up with newer and fresher ideas. The kitchen tips she offers are worth reading, too! Her site's such a joy to read and if you want to know what I'm talking about, then go and give her a visit!

Bangus (Milkfish) Belly in Soy Sauce is my food post for today.


Yup, another simple dish which I believe has lots of variations. Together with soy sauce, one of my sisters cook this with calamansi (calamondin) while over at my parent's house, it is cooked using vinegar, soy sauce, and some ginger slices. Sometimes tausi (fermented black beans) is added, too (minus the soy sauce this time). In my opinion, they all taste good. My recipe's slightly different just because...I feel like it. :D


Ingredients used:

  • milkfish belly (I used one package, roughly around half a kilo)
  • soy sauce (about one-fourth cup)
  • lemon juice (half a lemon)
  • garlic cloves (crushed)
  • chili (sliced)
  • water, freshly ground pepper, sea salt, few drops of sesame oil




How I cooked it:

  • Fish slices should be thawed thoroughly, then cleaned. Place inside the pot and then add in the soy sauce, garlic cloves, freshly ground black pepper, sea salt (go easy on this since the soy sauce is already salty; you can opt not to add this, if you want), and about one-fourth cup of water. Turn on the fire and once it starts 'bubbling' adjust the fire to a lower setting; add the chili then let it simmer for about ten to fifteen more minutes.
  • In my experience, properly thawed fish cooks fairly fast (specially if it is cooked in liquid) so after about fifteen minutes (max) of simmering happily away, you can turn off the heat. Pour in the lemon juice and a few drops of sesame oil, then let the fish slices rest for about a couple or so of minutes, covered.
  • Best served hot. :fire


Paired that off with steamed rice and some tomato slices. That was our lunch. :D

...yup, this is what happens sometimes when a vegetable needs to be eaten right away (in this case, the eggplants. lol).

Ingredients were far too few: ripe tomatoes, sauteed eggplants, raw chili slices, and some sprinkling of dried dill leaf tips. My dressing was a simple mixture of extra virgin olive oil, lemon juice, balsamic vinegar, salt, and pepper.

I had fun eating it! :L

I must admit, I haven't tried this concoction before. But I wouldn't hesitate to give it a try!  Ms. Mika's blog is relatively new, and it's where she shares some of her restaurant and food reviews as well as her kitchen skills. This week's Food Friday post is something which I had for breakfast:
Fried Rice with Tofu and Tomatoes


I can't deny it: I am a breakfast fan. lol. I can survive without dinner, but I CANNOT survive without breakfast! :P

Ingredients used:

  • marinated firm tofu (used soy sauce, smoked paprika, sugarcane vinegar, crushed black pepper, and a premix of different herbs - thyme, rosemary, marjoram, basil, oregano, and sage)

  • ripe tomatoes
  • fried rice (sauteed chopped garlic in hot oil, and mixed in the rice; i also added a few drops of balsamic vinegar)
  • some salted fish strands/flakes (cooked the salted fish and separated the flesh from the bones)
  • chili slices (optional)

Preparation was equally simple:

  • Place fried rice on plate.
  • Fry the tofu then place on a plate with napkins to remove excess oil; slice when it has cooled down.
  • Put the tofu slices on the plate.
  • Slice the tomatoes and put beside the fried rice.
  • Top fried rice with salted fish strands/flakes and raw chili.


Went quite well with my morning drink: orange juice. <3

...was looking at some old (weellll, those were 4-month old shots, lol) pictures and it made me homesick. It would be nice if we can go back home again next year. After all, it's just one flight away to the province. Couldn't say something nice about the transpo cost, though. :brow

It would be nice owning one of those recreational vehicles (rv) which you can see on television as well as on the internet. I don't see much of them around here, and I honestly don't know the reason why. It's a nice enough vehicle, and what I love most about it is that it can sort of serve as your house while you travel! Of course, it's a machine so when it breaks you've got to have contact with someone who can do reliable rv repairs. Right? I wonder if the main reason why it's not that popular is because it is kind of big and we have such little space available around here. Parking would be a hassle. Or finding a parking space, for that matter! lol.

Still, it would be nice having one of those; specially if you plan on going on a road trip with family and friends. :)

Christmas is coming (yup, we're already on the '-ber' month) and hubby and I are thinking what to get for our twelve-year old. We know he'd appreciate a gadget that he can use, and that's why we're thinking of getting him a pc tablet. I know, there are lots to choose from on the market these days, and prices are competitive. We plan to do some more researching.

I do remember our twelve-year old saying that he wants an ipod touch, though. That could also be another option. I just hope I can save enough money before the day comes! :D

This week's post is something that I have recently came to love: avocados!

I mentioned before that we used to have avocado trees on my father's farm, and so it wasn't a surprise if you see an avocado around dessert time. But, I never liked the way it was prepared back then: mixed with milk and sugar, then chilled. I know, I'm weird, lol. Some family members simply loved it!

This is the way I want my avocado prepared: Avocado Salad


Nothing really complicated about the food above; you might even have the ingredients around your house right now. ^_^

Ingredients are as follows:

  • 1/2 avocado (peeled and sliced)
  • one cup salad greens
  • 1 apple (peeled, cored, and diced)
  • 1 ripe tomato (diced)
  • 1/2 cup cheddar cheese (which i 'crumpled', instead of sliced)


for the dressing: olive oil, dried dill leaf tips, salt, pepper, lime juice, balsamic vinegar, and dried chili flakes all mixed together then poured over the salad.




 ...had that with some slices of wheat bread (toasted and buttered).

 I had a wonderful time eating this for breakfast...just couldn't get over the fact that avocados can taste soooo good! :P

You can modify the recipe with what you have on hand, of course. I think I could have added olives in there...or maybe a drop or two of sesame oil on the dressing.
Taste is such a personal thing! ;)

My Food Friday post for today is something I didn't cook: Pizza.
*Do I see a really big smile over there? LOL 

Yup, store-bought pizza delivered to our home... 



Well, I wish I cooked that myself (I tried before, and the dough was pathetic!); but this time it's NOT only the taste that mattered to me, but also the gesture which came with that pizza.

As some of you know, hubby has been assigned to the province (the Visayas and Mindanao areas) for a couple of months now. To some who aren't familiar with the location, well, no worries. It only takes about an hour (or about an hour and a half) via airplane to get there from where I'm at. That's a bit far, in my book. 

Anyway, two days ago my sons and I were feeling bored and lazy. We all missed their Daddy and decided to send him a message. His reply came back and after a couple of bantering we asked him for a pizza. We were joking, of course. But he wasn't since after about an hour this arrived:




We enjoyed eating that special pizza that day.  

Sure, I dream of getting a degree from the primo Culinary Schools in Ohio or other prestigious online cooking schools. But for now? I need it fast and easy! :D



*btw, it was already paid for when it arrived. lol
