...yup, this is what happens sometimes when a vegetable needs to be eaten right away (in this case, the eggplants. lol).
Ingredients were far too few: ripe tomatoes, sauteed eggplants, raw chili slices, and some sprinkling of dried dill leaf tips. My dressing was a simple mixture of extra virgin olive oil, lemon juice, balsamic vinegar, salt, and pepper.
I had fun eating it! :L

Hahaha! That's what I do also when the vegetables in the fridge looks like they're going to be rotten the next day hahaha! Good thing, we like salads... What you did is a money saver and a healthy food idea!!!
