The 7th Featured in Food Friday player is....

Ms. Heather, the blog owner of girlichef, with her post:
50 Women Game-Changers (in Food): #13 Rachael Ray - Orange-Cashew Chicken

The first time I visited girlichef I was really impressed with her cooking skills, as well as her photographic skills. As I browsed further around her site I learned that she went to culinary school (no wonder she's so good!), and her passion shines through each and every post she makes.  Everything is neatly categorized so if you're looking for something specific, you'll have no trouble finding it. Am sure you'll enjoy dropping by her site...and leave with plenty of ideas for your next meal! So go, check her out. Now.

This week's post is something that I have recently came to love: avocados!

I mentioned before that we used to have avocado trees on my father's farm, and so it wasn't a surprise if you see an avocado around dessert time. But, I never liked the way it was prepared back then: mixed with milk and sugar, then chilled. I know, I'm weird, lol. Some family members simply loved it!

This is the way I want my avocado prepared: Avocado Salad

Nothing really complicated about the food above; you might even have the ingredients around your house right now. ^_^

Ingredients are as follows:

  • 1/2 avocado (peeled and sliced)
  • one cup salad greens
  • 1 apple (peeled, cored, and diced)
  • 1 ripe tomato (diced)
  • 1/2 cup cheddar cheese (which i 'crumpled', instead of sliced)

for the dressing: olive oil, dried dill leaf tips, salt, pepper, lime juice, balsamic vinegar, and dried chili flakes all mixed together then poured over the salad.

...had that with some slices of wheat bread (toasted and buttered).

I had a wonderful time eating this for breakfast...just couldn't get over the fact that avocados can taste soooo good! :P

You can modify the recipe with what you have on hand, of course. I think I could have added olives in there...or maybe a drop or two of sesame oil on the dressing.
Taste is such a personal thing! ;)
