Food Friday

This week's Featured Food Friday player is ...

This week's post is something that I tried making for the first time: Tofu Gising-Gising (which literally means Tofu Wake-Up Wake-Up). LOL. I know, it sounds weird.


Ingredients:

  • Tofu (firm preferred, diced/cubed)
  • Coconut milk
  • Chili (pith and seeds removed to lessen the heat)
  • onion and garlic (diced)
  • salt, pepper, fish sauce (optional)
  • oil for frying



Procedure:

  • Fry the tofu, then set aside. Remove excess oil (leave about two tablespoons for sauteeing). Add onion, garlic, and chili. Mix every now and then; don't burn.
  • Next add the fried tofu, then dump in the coconut milk.
  • Simmer for around five minutes then adjust the seasoning.
  • Remove from fire once satisfied.
  • Yummy when eaten warm.



It was a bit spicy, but really manageable since I took out all the pith and seeds. Ok, a few were stubborn. :P I liked it! There are different variations... some use meat (usually pork or chicken) instead of tofu. We had tofu to spare, so we used that. :)

This week's Featured in Food Friday player is...

Ms. Ann, who owns the blog Ann Ordinario: Wife, Mom, PT (Celebrating Life), with her blog post: Dinner at Tony Roma's Ribs Seafood Steak

Ribs, seafood, and steaks...now who wouldn't be enticed by those three yummy words! Plus of course those tempting shots...if you want to learn more, then do visit Ms. Ann's blog. I love her header (though of course it has nothing to do with the featured post, lol. I just love how she personalized it) and the simple and elegant lay-out of her blog. Expect not only yummy food posts, but also some amazing nature shots!

This week's food post is Fried Rice (with cheese, squash and tofu). I know, kind of weird, right? ;)


Ingredients:

  • steamed rice
  • squash (cut into thin strips)
  • tofu (sliced and fried)
  • cheese slices (I used cheddar cheese)
  • scrambled eggs
  • cooking oil, pepper and salt
  • fish sauce (optional)



Procedure:

  • I marinated the tofu slices overnight first (soy sauce, paprika, mixed herbs: rosemary, sage, thyme, and basil), then fried them. After letting them cool, I sliced them thinly.
  • while waiting for the pan to become hot, prepare the rice (usually we use leftover steamed rice for this dish; much easier to handle). Just a matter of separating the grains, making sure it will be heated through.
  • Saute the squash slices; this wouldn't take long, adding a bit of salt, if you want. Remove and place together with the tofu.
  • Cook the scrambled eggs, then remove and place together with the tofu and squash.
  • Usually the scrambled eggs will absorb all the oil, so you need to add another tablespoon or so of cooking oil.
  • Once hot, add the rice and stir to make sure it's heated through. Add salt and pepper, if you want.
  • Add the scrambled eggs, squash, and tofu to the rice and mix again. I added fish sauce at this point. Once you're satisfied, transfer to a serving plate. Top with sliced cheddar cheese.
  • Enjoy together with your viand.



I paired the fried rice together with some fresh tomato slices and fish (cooked in a bit of water, vinegar, salt, pepper, chili, and lots of garlic).  :)

Burger in Olive Oil and Butter Sauce

Now this was certainly an interesting take on how you can dress up your burger and pair it with rice, instead of the usual buns!  Olive oil and butter do go well together (in my honest opinion) and will certainly help enhance the meat's flavor...I haven't tried her recipe yet, but I just might! Want to know more? Then do go and check her blog out!

Three of my favorites together in one dish: Tofu, Tomaotes, and Toge (Mung Bean Sprout)!



Ingredients used:
  • tofu (marinated in soy sauce, spanish paprika, and pepper)
  • tomatoes
  • mung bean sprouts
  • garlic, onion, salt, pepper, roasted sesame seeds
  • sesame oil
  • canola oil for frying and sauteeing


How it was prepared:
  • Marinated the tofu overnight (soy sauce, spanish paprika, pepper), then fried the next day. Set aside to cool, then slice after it has cooled down.
  • Slice the tomatoes. Clean/wash the mung bean sprouts. Set aside.
  • Slice one medium onion. Crush and slice garlic. 
  • Heat up pan and add around two tablespoons of oil; when hot enough, add the onions then the garlic. 
  • Add the tomatoes next. After around two minutes, add in the mung bean sprouts. It will release a bit of liquid and by then you can add in the sliced fried tofu. Mix gently.
  • Season with salt and pepper. If you want, you can add in more liquid.
  • Drizzle a bit of sesame oil, then sprinkle the toasted sesame seeds on top.
  • Serve.


Honestly, I wasn't sure if my sons would go for this...but they did! <3

I must admit, I haven't tried this concoction before. But I wouldn't hesitate to give it a try!  Ms. Mika's blog is relatively new, and it's where she shares some of her restaurant and food reviews as well as her kitchen skills. Am sure she'd also appreciate it much if you drop by her comfortable nook; so hop on over and leave her some encouragements and commentluv, fellow foodies!

This week's Food Friday post is something which I had for breakfast:
Fried Rice with Tofu and Tomatoes


I can't deny it: I am a breakfast fan. lol. I can survive without dinner, but I CANNOT survive without breakfast! :P

Ingredients used:

  • marinated firm tofu (used soy sauce, smoked paprika, sugarcane vinegar, crushed black pepper, and a premix of different herbs - thyme, rosemary, marjoram, basil, oregano, and sage)

  • ripe tomatoes
  • fried rice (sauteed chopped garlic in hot oil, and mixed in the rice; i also added a few drops of balsamic vinegar)
  • some salted fish strands/flakes (cooked the salted fish and separated the flesh from the bones)
  • chili slices (optional)

Preparation was equally simple:

  • Place fried rice on plate.
  • Fry the tofu then place on a plate with napkins to remove excess oil; slice when it has cooled down.
  • Put the tofu slices on the plate.
  • Slice the tomatoes and put beside the fried rice.
  • Top fried rice with salted fish strands/flakes and raw chili.


Went quite well with my morning drink: orange juice. <3
