Something light and fresh this week: Cauliflower and Pasta (with Coconut Milk and Basil)

Ingredients:

  • pasta of your choice (cooked according to package directions)
  • cauliflower
  • ground pork (optional, if you want to make it vegetarian)
  • basil cubes (here is how I did mine)
  • coconut milk (fresh, frozen, or from a can, or powder....whichever is available)
  • salt, pepper, garlic
  • arugula

Procedure:

  • Place ground pork on hot pot with a bit of water. Add salt and pepper. Once water has evaporated, brown the meat for a bit, then add garlic and cauliflower. Mix till cauliflower is half-cooked.
  • Meanwhile, cook the pasta and keep warm.
  • Add basil cubes and coconut milk to the cauliflower and pork. It's not going to be a soup, so go easy on the amount. Turn off fire.
  • Add to the pasta and mix well.
  • Adjust seasoning, if you have to.
  • Add a side of arugula (which I drizzled with a bit of olive oil, salt, pepper and calamansi juice), or any green of your choice.

Enjoy!

I really loved the dish, though my youngest was not so fond of the arugula. Weird combination, but I have never really been known to follow what is tradition. lol. When it comes to food, I have always believed: To each his own! :P

I would like to say, though, that this is going to be my last Food Friday post. Well, I just might post (will, most probably) some more food posts, but it would not be strictly on Fridays. lol. I love food too much. :D

Also, I would love to thank everyone who has played Food Friday! Through this weekly thingy I have learned not only about new (and old) restaurants, new recipes, new ingredients, new ways of cooking, but also about the different cultures and the important role that food has been playing... Again, many thanks! :)

Ms. Oggi, with her post: Green Tea Marble Kasutera on her blog I Can Do That!

I must admit, this is the first time that I have heard of this lovely Japanese sponge cake. It does look inviting, specially with those green tea swirls! Want to know how Ms. Oggi made those? Click on the shot!

{{SHORT ANNOUNCEMENT: Have decided to let the linky stay open for five days, instead of three. :)}}

Another easy dish for this week's post: Pasta with Tomato Pesto and Crab Paste

Ingredients

  • Pasta of your choice (all I had was a 3/4 pack [400g] elbow macaroni, but used only half)
  • Sun Dried Tomato Pesto (used around 3 heaping tablespoons)
  • Crab Paste (2 tablespoons, mixed with 1tsp. calamansi juice and 1 chopped garlic)
  • Edamame (roasted and lightly salted) and moringga (dried leaves), both optional

Procedure

  • Cook pasta according to package instructions.
  • Prepare the crab paste by adding the juice and the chopped raw garlic. Set aside.
  • Once the pasta is cooked, drain and mix in the pesto and the crab paste.
  • Mix well; you can add more of the pesto or crab paste if you feel that the taste is lacking.
  • Place in a serving dish and top with the roasted edamame and crushed dried raw moringa leaves.
  • Enjoy!

Yes, no salt or pepper added. The crab paste was already a bit salty; I thought of adding capers, but am glad I didn't. It would have been too salty! No cheese, too! I think it would look nicer if I added a few parsley (or maybe cilantro) leaves, and of course, some sprinklings of chili flakes. But that's just me being me. :D

Please don't forget to add a link back to this site (you can get the buttons here; deciding to use text instead of buttons is fine also) to be able to add your posts below. Many thanks and hope everyone is going to have a great time this weekend!

Easy Lettuce and Salted Eggs Salad, that's my post for this week. :)

  • salted egg (I only used one)
  • tomatoes (around two medium sized ones)
  • olives (optional)
  • salt and pepper

dressing:

  • extra virgin olive oil
  • calamansi juice (you can use lemon)
  • salt and pepper

  • Place leaves in mixing bowl, then set aside.
  • Remove the shells, then slice the egg. Slice the tomatoes, olives and then dump everything together with the leaves. Add salt and pepper, if preferred. I did with mine.

Chef Win, who blogs over at lamonsakusina with his blog post: Lamb Chops with Honey and White Balsamic Vinegar

I wish that lamb chops are not that expensive around here, but they are. That's why I can only imagine that tasty treat that Chef Win shared with us from his food blog, last week. His blog is relatively new, but he is not a newbie when it comes to cooking; am sure he has more delicious recipes to share with us. If you want to know more about him and his recipes, then click the picture!

I wanted to try Tuyo (Dried Fish, usually salted) Pasta, but I forgot to buy the fish, so this is what I came up with: Mushroom-Olives Spaghetti.

Ingredients
  • spaghetti (or your choice of pasta, cooked accdg to package instructions)
  • mushrooms, sliced (I used shiitake -which I soaked in water for two hours- since that's what I have, but you can use canned or any other fresh/dried mushrooms that you have available)
  • olives (pitted, preferrably; you can use black/green or both)
  • all-purpose cream
  • salt, pepper, olive oil, garlic, onion, water (as needed)
  • malunggay powder (optional), or any other fresh herbs as garnish

some of the ingredients used: all purpose cream, olives, and mushrooms

Procedure
  • Set aside the cooked spaghetti, keep warm.
  • Heat olive oil in pan and saute the sliced garlic and onion. Add the mushrooms and cook until soft (in my case it took around twenty minutes and I had to add a bit of the water where I soaked it).
  • Add the sliced olives (you might want to add in olive oil) and mix well. Season with salt and pepper.
  • Pour in cream and add water (I used the water where I soaked my mushrooms) until you get the consistency that you want.
  • Add pasta and cook over low heat for around half a minute then turn off the heat.
  • Transfer on a plate and sprinkle with a bit of the malunggay powder (which is optional). Or you may opt to add parsley or any other fresh herbs, instead.
  • Best eaten warm.

I forgot that my eldest wasn't so much into olives (he loves mushrooms, though) so he ate sparingly while my youngest loved it! Yes, he LOVES olives. lol. Me too. :D
