I love eating vegetables, and this is one veggie that I'd love to try! Ms. Sumee's recipe is so simple, it's no wonder it became such a hit with her family! Want to know how she prepared them? Do click on the shot!

White Squash with Sardines (In Tomato Sauce), that's what I cooked last night. First time I have ever served that veggie here at home, and am so glad my kids liked it. I liked it, too. :)


Ingredients

  • White Squash
  • Canned sardines in tomato sauce
  • moringa leaves
  • coconut oil
  • onion, garlic, black pepper, salt
  • calamansi juice
  • soy sauce (optional)



Procedure:

  • Skin the white squash then cut and remove the seeds. Dice and set aside.
  • Place coconut oil (use your favorite oil) on pan and saute the onions and garlic for a few minutes. Dump in the diced white squash and mix. Add salt and pepper. Continue cooking till it gets tender (half-cooked), which was roughly around five minutes in my case. 
  • Add the canned sardines, then let it simmer for another five to seven minutes.
  • A few dashes of soy sauce was added at this point. Mix and adjust seasoning.
  • Turn off heat and add in a handful of moringa leaves.
  • Wait for around two minutes, squeeze some calamansi (to get the juice),  then serve.
  • Loved it with rice and some crispy fried squid.

Another easy dish for this week's post: Pasta with Tomato Pesto and Crab Paste


Ingredients

  • Pasta of your choice (all I had was a 3/4 pack [400g] elbow macaroni, but used only half)
  • Sun Dried Tomato Pesto (used around 3 heaping tablespoons)
  • Crab Paste (2 tablespoons, mixed with 1tsp. calamansi juice and 1 chopped garlic)
  • Edamame (roasted and lightly salted) and moringga (dried leaves), both optional



Procedure

  • Cook pasta according to package instructions.
  • Prepare the crab paste by adding the juice and the chopped raw garlic. Set aside.
  • Once the pasta is cooked, drain and mix in the pesto and the crab paste.
  • Mix well; you can add more of the pesto or crab paste if you feel that the taste is lacking.
  • Place in a serving dish and top with the roasted edamame and crushed dried raw moringa leaves.
  • Enjoy!



Yes, no salt or pepper added. The crab paste was already a bit salty; I thought of adding capers, but am glad I didn't. It would have been too salty! No cheese, too! I think it would look nicer if I added a few parsley (or maybe cilantro) leaves, and of course, some sprinklings of chili flakes. But that's just me being me. :D

This week's post was something that my sons and I made when someone from Instagram was kind enough to send over some puto molds (when I mentioned that I was having difficulty finding them). I was so excited I immediately looked online for some puto recipes and I found one that I liked: Puto de Moringa (Steamed Muffins). I had the ingredients so we decided to make a batch. I had to modify some of the ingredients, though. Am calling mine simply Very Cheesy Puto Malunggay. :P


Ingredients (adapted from Bits 'n Pieces' Puto de Moringa (Steamed Muffins) post - link above):

  • 2 cups all-purpose flour
  • 1 cup powdered milk
  • 3 tbsp moringa (malunggay) powder
  • 3 tsp baking powder
  • 3/4 cup muscovado sugar
  • 2 whole eggs, beaten
  • 1 tbsp vanilla extract
  • 2 1/4 cups water
  • cheese slices (i only had Kraft Cheddar cheese, which melted so fast!)



Procedure:

  • Mix well all dry ingredients
  • Add water and vanilla.Fold in eggs, mix well until free from lumps
  • Fill puto molders with the mixture (3/4 full) and arrange in the steamer
  • Steam for 10 to 12 minutes. Add cheese slices the last two minutes (to avoid the cheese going all over!), if you use one that melts quite fast. If not, you can put the cheese during the last five to six minutes.



I enjoyed making this even if it didn't come out perfectly (no rounded shapes on top, lol). My sons and I had a fun time, too: preparing/mixing/steaming. We made quite a lot for just the three of us, we decided to give some of them to my sister (who lives nearby). It was a yummy and healthy snack! What I didn't like much: the cleaning/washing of the puto molds! LOL

This week's Featured in Food Friday players are ...

Mr. Erwin, a guest blogger and chef, and Ms. Iska, who owns the blog ISKAndals.com. Their post last week was CEVICHE.

 That shot reminds me of  "Kinilaw", a very popular dish back home (I haven't tried making it myself, though). But this dish is actually quite different (you've got to visit the post to see it!) and turns out to be something that I'd love to try. Ms. Iska's foodie site (she also does 'sketches') is a heaven for those who loves food and enjoys preparing it. Together with guest blogger Chef Erwin, they offer us dishes that are familiar yet has been modified to create something that is all their own. Their recipes, coupled with wonderful informative shots, actually helped me liven up some of my boring dishes. Oh yes, it did! :)

My food post for this week is one of those boring dishes, lol. But it's really easy: Squash with Moringa in Coconut Milk.


Ingredients:
  • Squash
  • Moringa leaves
  • Coconut milk/cream (you may use powder or canned; I prefer to use freshly grated coconut and wring the liquid out. basically, I use "thin" {second pressing, with around 2 cups of water added} and "thick" {obtained during the first pressing, with about half a cup of water added} coconut milk, reserving the latter during the last phase of the cooking)
  • Bell pepper (red)
  • Ginger, Chili, Salt
  • Fish Sauce (optional)


Procedure:
  • Clean and cut squash. Put inside a pot together with "thin" coconut milk. Dump in the crushed ginger, bell pepper slices, chili, and salt.
  • Let boil, then simmer for a couple of minutes until squash is half-cooked.
  • Add the moringa leaves; wait for about a minute, then mix in the "thick" coconut milk. Continue mixing until it starts simmering again. Taste and adjust seasoning. I added fish sauce. Turn off fire.
  • Serve hot.


Loved it with fried salted fish and rice. Ahhh, soul food! :D
