That's pancit bihon (a type of noodle) guisado (my version, lol) which we had for lunch. What's different about this noodle (aside from it's greenish tinge) is that it is fortified with malunggay (Moringa oleifera). I was intrigued, so I bought a pack and left it in storage promptly for almost two weeks. LOL.
I only remembered I had it while I was rummaging around, looking for something to cook. That's right, we are now low on stocks. So I mixed it with what was available inside the freezer: ground pork and peas (we also have boneless bangus belly but I don't think it will go well with the noodles...or will it?). I also found some potatoes lying around, so added that too. Plus soy sauce, salt, fish sauce (yes, a must!), ground pepper, garlic, onion, sesame oil, and a bit of dried dill. Of course, we shouldn't forget another important ingredient: calamansi juice (added to the pancit on your plate).
Verdict: hubby said it tasted weird (LOL) while my two-year old ate two servings of the dish. As for me, I liked it. :P
