Food Friday

This week's Featured Food Friday player is ...

Since it's now summer time here (and my kids are not so keen on summer classes - can't blame them! lol), we have been waking up late. That's why our breakfast these days are usually heavier than our school days breakfast fare (fruit, soft boiled eggs, and juice/hot choco, plus the occasional cereals), which should be done in a flash. lol. Here's our "usual" summer late breakfast food: Eggs Two Ways, is how I'd like to call this. :P


Ingredients
  • Eggs
  • Potatoes (diced)
  • Bellpepper (diced)
  • Tomatoes (diced)
  • Chili leaves (or use what you have available)
  • salt, pepper, garlic, onions
  • Coconut oil for frying



Procedures
  • A. Put the diced potatoes on hot pan with oil. Then add the bellpepper, garlic, onions and tomatoes. Season with salt and pepper.
  • Put everything in the center of the pan, then top with the chili leaves (careful, there might be a bit of oil splashing since the leaves are "wet"). Immediately put the egg on top, some salt, then cover the pan (so that the leaves and egg will cook because of the steam).
  • I like my egg "cooked" on top (am not a fan of "raw" eggs, though it does look good in pictures. lol), so I waited till it was no longer "red".
  • Remove from the pan and transfer to a plate. Sprinkle with pepper.


**I added salt on the egg before putting on the cover; you may omit this, if you want. Instead, you may add the salt and pepper together after transferring the whole thing to a plate.


  • B. Place potatoes on hot pan with oil. After a few minutes, add the bellpepper, then the garlic, onions, and tomatoes. Add salt and pepper.
  • Remove from the pan once cooked.
  • If there are no more any oil on the pan, add about a tablespoon. Once hot, add the beaten egg.
  • Put the cooked mixture on top of the scrambled egg, then some chili leaves. Place on one side only, so that you can easily flip the other side to cover the mixture.
  • Cook some more, if you want, by flipping the whole thing over.
  • Drizzle with ketchup, or whatever you fancy.


Both dishes were yummy served with toast and our desired drinks (we all had hot choco that day). It's delicious with hot steamed rice, too, am sure. Yes, I will be serving more of this the next couple of days. Most probably change the chili leaves to whatever I have available! Or maybe add plantain bananas. LOL. Crazy, huh?! :)

This week's Featured in Food Friday player is...

Ms. T. Julie, who owns the blog Plateful of Fun, with her blog post Pizza with Hot Sauce.

Most, if not all, of us LOVE pizza! It's a great pick-me-up snack, or meal; what I love most about pizzas is that you can choose to put only the toppings that you like. So, you can make it into an all-meat meal, or purely vegetarian. Or both. Or you can even choose to make the whole pizza yourself! Now am making myself hungry. lol. Aside from this yummy pizza, you can also view recipes and food shots taken by T. Julie herself. Do take the time to drop by!

Cooking the same dishes can be quite tiring, so I thought I'd come up with something a bit different than my usual routine of beef and potatoes. I call them: Cheesy Potato Pockets. :)


Ingredients:
  • boiled potatoes (cut in half)
  • ground beef (cooked; seasoned with pepper, salt, bellpeppers, garlic, onion, herbs)
  • cheese (quick-melt preferred)


Procedure:
  • Hallow out the inside of half of a cooked potato, then replace the hole created with the cooked ground beef and a bit of the liquid.
  • Layer some cheese slices in a criss-cross pattern on top.
  • Place in oven/toaster just to melt the cheese. In my case, I set the temperature too high and the cheese got burnt instead. lol.
  • Can be served hot or at room temperature.

My eldest son said that he would have wanted it to be smothered in gravy, lol. I will, next time. :D

The Featured in Food Friday player for this week is....

Ms. Chelo who owns the blog Home and Bahay, with her blog post: Caldereta: A Kin to Beef Stew

Caldereta is one dish that I love eating, but haven't really tried cooking. After reading Ms. Chelo's delicious food post  (together with her yummy food shots) I told myself it's about time I give it a try! Whether you've tried it yourself, or not, why don't you check out her own version of caldereta...I think you might like her version, too!

My food post for this week is something really easy (and quite common, lol): Bacon and Potatoes in Scrambled Eggs


Ingredients used:
  • Eggs (two)
  • Bacon (roughly four slices, chopped)
  • Potatoes (two medium sized, diced)
  • salt, pepper .
  • milk (around a tablespoon)

What I did:
  • Place bacon on hot pan (no need to add oil) and brown. Take the cooked bacon out of the pan and remove most of the oil, leaving just enough to fry the diced potatoes.
  • In the meantime, beat the eggs together with the milk, salt and pepper.
  • When the potatoes are done, pour in the egg mixture. Top with the bacon bits.
  • Take out of the pan whenever you want; personally, I like mine 'fully cooked'. xD


Ate that together with an apple and some buttered toast, with my coffee. That was my lunch a couple of days ago. I am a breakfast person, meaning I love having breakfast any time of the day! LOL :P
