I just love Chef Erwin's healthy twist to our "Batchoy" dish! I know you want his recipe for this delicious treat, so why don't you go on ahead and click on the shot above! Well worth it, I tell ya! :)

My food post for today: Cheesy Cauliflower-Bacon Toast!



Ingredients:
Bread of your choice (I chose mini baguettes)
Good melty cheese (I used Pizza Plus - a mozzarella, cheddar, and parmesan mix)
Cauliflower (a medium sized head, cleaned and separated)
Bacon (as much or as little as you like; any type will do, but I used honeycured)
Bell pepper (diced)
Herbed Cream Cheese (I used Pan de Manila's)
Olive oil, pepper, salt


Procedure:
Brush olive oil on sliced baguettes then spread cream cheese. Toast, then set aside.
Dump sliced bacon on hot pan (no oil needed) until cooked halfway; add cauliflowers then bell pepper. Once done (more or less after 3-4mins; depends on your fire), remove then place on plate with paper towels to remove excess fat.
Place the bacon-bell pepper-cauliflower mix on top of the toast; pepper and salt may be added, if you want. Put lots of cheese on top.
Toast again until cheese melts and bubbly.
Bite (but make sure it's not too hot first, lol), and enjoy!


The kids and I actually had this as a snack. Went so well with our cold calamansi juice! :D

The 'cheesiness' would be my main attraction to this toast. If only such ingredient wasn't so pricey in my part of the world.

I am not into cauliflower...but I think broccoli would be a good replacement! :) Nice idea to pair this with Calamansi juice, by the way.

@Ms. Oggi: loved the combo! actually, those were the only ones available, lol. but i love how my kids were "encouraged" to eat cauliflower. :)

@Hazel: oh yes, I was betting on the cheese to encourage my boys to eat the cauliflower. they are expensive here, too...but we try to indulge ourselves every now and then. lol. we don't buy the pizza pack every week, but maybe twice or once a month. :)

@Dominique: yes, very easy and my kids loved the cheese (the cauliflower came as an after-thought for them). :)

@Dexie: yes, i think it was pretty clever, lol. made my boys eat the veggie. :)

@Jenn: my boys aren't so much into cauliflower, too (my eldest actually suggested broccoli); the cheese helped. :D
