This week's featured Food Friday player is...

Ms. Angie, with her post Crab Shen Mian (Crispy Noodles), on her blog: Simply Mommie.

I love crabs, though I find it tiring picking through the shells. That hasn't stopped me from eating those delicious morsels, of course! In fact, since it is one of my mom's fave, we used to have crabs at least once a week back home. Yummy! I would so love to try Ms. Angie's recipe and that's why I have it bookmarked! Her blog not only features healthy recipes for families, but also about parenting. Click on the picture above and see for yourself!

My post for today is sort of a continuation of last week's post...yeah, it's still about the avocado and sandwiches. lol. Avocado - Egg Sandwich, that's what I call it. :)


Ingredients:
avocado - peeled and sliced/diced
hard-boiled egg
mayonnaise, salt, pepper, chili flakes, margarine (bacon flavored) extra virgin olive oil
cilantro/Chinese parsley/coriander - small bunch, washed and chopped
lettuce, bread (your choice)


Procedure:
After peeling, slicing and dicing the avocado, set aside. You may leave some bigger slices for garnish.
Mix together the mayonnaise, mashed hard boiled egg, prepared cilantro, diced avocados, salt, pepper, and chili flakes. Taste and adjust to your liking. Set Aside.
Prepare the bread: put margarine (or butter) on one side of both slices, then toast. Remove once done.
While still hot, place lettuce as a base, then add the avocado-egg mixture. Top with extra avocado slices, chili flakes, and a drizzle of the olive oil.
Cover with the other slice of bread.
Enjoy!


I was surprised my sons liked this one. They ate the ones I placed on top of the sourdough bread..while I had the whole wheat sandwich. It was delicious with some sliced fruits (apples and oranges) and a cold drink of calamansi/calamondin juice! Definitely will try this again!

PS. This isn't my recipe; I know I found it somewhere while surfing the internet for some avocado recipes. I just modified it to my liking. ;)

I noticed you used the Dari Creme bacon flavor... does it really taste like bacon? Is it good?

@Jenn: yeah, surprisingly, it does taste like bacon. we first tasted it on mashed potatoes and we liked it...we still prefer butter, though. :)
