I have heard/read of tortilla soups before, but haven't tried it yet. Chef Heather's post just made me want to try one real soon! My family and I have been feeling a bit under the weather lately, so I haven't been cooking much. What I came up for this week's Food Friday post is:
Poached Egg on Pancakes
Ingredients:
poached egg
pancake (I used the recipe from
here)
- 3/4 cup milk
- 2 tablespoons white vinegar
- 1 cup all-purpose flour
- 2 tablespoons white sugar (i used 2.5 tbsp since)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 2 tablespoons butter, melted
- cooking spray
Procedure:
- Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour".
- Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
- Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
The pancakes tasted a bit different than the ones we were used to (it wasn't as sweet as the ones from the premixes), but it went well with the poached egg...my eldest son liked it so much he requested that we have it again the next day! lol. Btw, he had two poached eggs on his plate. I only had one. :D

Haven't tried that before. I've been thinking about something new to add to my pancakes. Nagsawa na ako sa honey or syrup and especially butter. That might be the answer... poached egg. Hmm....
congrats to Chef Heather for the featured blogger of the week :-) Sis, the pancakes look delish and the pooch eggs but I unfortunately can't cook mine like your delish pooch egg as my little K is allergic :-( have to cook the egg really well :-) Dropping by from Food Friday.
