| First, I really like how the shots were processed... so vintage-like; reminded me so much of those good ol' days. Back then, I didn't have to think about budgets and menus. lol. But seriously, Say Cheese is a photoblog that covers a wide variety of topics. From nature to interior designs, street photos, food, and much much more! Browsing through their site is such a pleasurable experience...I encourage you to go ahead and experience it for yourself! |

My post for this week is something really light...my version of the TLC sandwich.
Ingredients are few:
- whole wheat bread
- tomatoes, lettuce (i used romaine), cheese (crumbled cheddar)
- olive oil, dried dill leaf tips, balsamic vinegar
All just a matter of 'piling' them up:
- Put lettuce on top of a piece of bread, then add the tomatoes.
- Next the crumbled cheese. Sprinkle some dried dill leaf tips, then some olive oil.
- Add some drops of balsamic vinegar then cover with the other piece of bread.
Easy, fast, and a nutritious snack! :L

Sweetened Saba
Lately, my family and I have been eating much of these sweetened bananas. Had more than we can eat before it spoils, so decided to cook the bananas; stores easily (just place inside the refrigerator) and a handy snack when we want something sweet. ^_^

Another breakfast post for me (I am a breakfast fan, lol) ...Tuna Paella with Bananas and Eggs.
I know, I cheated on this one (for me, the faster the better, lol) because I used a can of tuna paella. Yup, from a can. :i
Ingredients:
- cooked rice
- bananas (plantain variety)
- eggs
- cooking oil, tomatoes, salt, pepper,
- a can of tuna paella
Procedure:
- Halve some plantain bananas and fry. Set aside.
- Saute tomatoes, add in some scrambled eggs, season with salt and pepper. When cooked to your liking, remove from the pan and set aside.
- Open canned tuna paella and place contents on pan. No need to add oil since it is already rather oily. Stir and mix in cooked plain rice (even if the canned paella already has rice, i wanted to add plain rice since i find it too strong for my taste). Continue mixing until well incorporated, and heated through.
- Assemble everything on a plate, and enjoy!
I had that together with hot chocolate... :$

Fried Embutido
I have no idea why, but back at my parent's home we seldom serve embutido (meatloaf prepared Filipino style). I guess that's partly the reason why I don't like eating it, unless it's fried.
Would love to learn how this is cooked, though. Some love it with ketchup, but I love mine with tomatoes sprinkled with salt and dried dill leaf tips.
Got that embutido from SIL when we came for a visit. :)

Unknown...to me.
No idea what this plant is called...am not even sure if these are the plant's flowers, but it does look like it! The leaves are nicely patterned and that's why my sister got this plant. The small flowers aren't really that noticeable (it's small and lightly colored), but it helps complete the picture. ^_^

| That pizza shot is making me hungry. Again. This was just one of the foods that they ordered when Ms. Jesz and her siblings celebrated their mom's birthday. I must say, theirs is a family that loves food! Her blog posts is a collection of her 'trips' (out of town, food trips, just within the metro, and the like); she shares with us part of her journeys and her stories. My post for this week is NOT another noodle recipe as promised. :D
It's a veggie dish, and I have no idea what to call it. It's somehow similar to mashed potatoes, but I didn't use potatoes. I used squash. So maybe i can call this mashed squash...?? :P
Ingredients used:
- squash
- cheese (grated cheddar) and cheez whiz
- milk, butter
- ginger, salt, pepper

Procedure
- Peel the squash and cut into small sizes. Boil for a couple of minutes, with ginger and salt, until soft. Remove from the liquid and mash.
- Add butter and some drops of milk.
- Add crumbled/grated cheddar cheese.
- Season with salt and pepper. Mix.
- Butter the pan (i chose cupcake cups for individual servings) then plop the seasoned mashed squash inside. I added cheez whiz on top (I wanted to know what the result was going to be, lol); you can use any type of cheese.
- Place inside toaster or oven. Bake until cheese gets bubbly and slightly burnt. Mine was overly burnt, so don't copy what I did. :D
- Remove from toaster or oven and serve hot or in room temperature.
We had that together with roasted chicken. The kids (myself included, lol) loved it! :L

Need not be expensive...
While in college, my classmates and I used to look for discount scrubs, which we needed for our surgery classes. Being students far from home, we had to budget our allowance since every weekend we need to have transportation money to go home. That doesn't mean we didn't have good times, though. Of course we did! It was just a matter of choosing which items you needed, and which stuffs you can pass up so that you can 'splurge' on whatever you want. Besides, having a 'good time' need not be expensive...going out for a pizza with friends (or finding a common time together) was good enough for us back then.
Come to think of it, just being with friends that you like (even if sometimes it's online only) is good enough for us until now! ^_^
Clearing and Cleaning...
After our desktop retired last month, we were left with just the printer, modem, and speakers on the computer table. I find the computer table too big so I started clearing it...and found out that the printer needed to have it's toner cartridges replaced! I need to print something by November, so I should really buy a new replacement within the next two weeks.
In the meantime, on with the cleaning and clearing. Actually, I have already removed some of the things, then decided to use the table as sort of a bookshelf; for my three-year old's books and stuffs.
It's not a permanent thing, though. I still plan to remove that big computer table...and I hope it will be SOON! :D
Salted Egg and Ripe Red Tomatoes
I never was a fan of this side dish, until my father made some at home. We had lots of ducks then, and they seemed to be laying eggs more than we can handle; so my father decided to make salted eggs. Sure, some eggs were served scrambled or hardboiled (we didn't care much for sunnyside-up, lol), but my sisters and I found it weird since duck's eggyolks were almost orange in color. You know how weird (and picky!) kids can get sometimes...so my father resorted to salted eggs.
It wasn't an instant hit, but I gradually came to love it; I loved how the salted eggs weren't that salty at all and it was perfect with red ripe tomatoes...
Oh, I tried making them on my own (when I had my own family), but I couldn't seem to find fresh duck eggs as easily as chicken eggs here in the city. Or maybe am just asking for them in the wrong places. I guess for now I have to be content with the ones my SIL sends over every now and then.
For now. ^_^

Rice Noodle Experiment, that's what I'd like to call this dish:
My post for today is noodles again. I know, next week it will be different. Pinky promise.
Well, this one was inspired by a Thai friend named Poulet, who also loves to take shots of what she whips up in her kitchen. I just love the healthy dishes she makes and these two dishes just inspired me to try something different. Hence, my rice noodle experiment (my first time to try cooking this type of noodle).

- chicken breast
- squash, bunch of celery, pechay (bok choy)
- onion, garlic (diced)
- salt, pepper, soy sauce
- chicken stock (seasoned broth from some leftover raw chicken bones and skin)
- toasted sesame seeds
- rice noodles

- Cut chicken breast in small sizes, then brown over a hot pan with a bit of oil. Season with salt, pepper, and soy sauce. Add diced onions and garlic.
- Add in the squash since it takes longer to cook. Put the pechay (bok choy) next, then the celery. Mix everything well. Turn off heat.
- In a separate pot, boil some water and cook the rice noodles, which will only take about two minutes.
- Place cooked noodles in a bowl. Add chicken and veggie mix.
- Pour hot chicken stock.
- Sprinkle with lots of toasted sesame seeds.
- Serve hot.
I served this hot, but my sons loved it at room temperature.
I must confess, I'm a rice noodle fan now! :L

Mimosa pudica (Sensitive Plant)
Most people think of this plant as a weed, but my sister likes the tiny flowers so she lets them be on her garden. She does trim them every now and then since they can spread fast....
I think the flower looks cute, too... ^_^

Luck...
Do you believe in luck? Me, well....I honestly don't know. But I'd like to believe. I believe that everything happens for a reason, too. Sometimes it's good, and sometimes it's not. Take for example a friend of mine who wanted to go abroad, looking for 'greener pastures'. He was already working here, but felt that he wasn't going anywhere he wanted with his current salary, so he looked for one of those 'Medical Equipment Repairer Jobs' postings in the internet. He found one, applied, and actually got to travel and work abroad! All in a matter of months! Now, isn't that lucky?
Downside, though, is that he had to leave his pregnant wife. Now that's a downer. But I guess if you're really bent on getting something, you move forward and do it. Everyone needs to adjust. Which, I think, can be quite painful and hard, sometimes.
Hopefully, my friend will find his dreams ... soon. <3

...i really liked how it tasted; reminded me so much of my childhood days when we used to order chiffon cake from a certain bakery. It had that orangy taste in every bite. Yup, I almost ate half of that cake. :vD

Somehow, maybe she knew I'd pig out on that particular dessert. :P
